Moet & Chandon Champagne & Hook & Line Caught Dish
The lightly creamy Brut imperial by Moet & Chandon contains notes of apricot, citrus and black raspberry, making for a well-cut finish that pairs perfectly with seafood. That is why we chose our catch for this week - Cobia caught off the coast of Panama City Beach prepared with seasonal, local, and regional flavors. This white and flaky fish has a mild flavor that will balance with the citrus notes of Moet & Chandon. This combination will be light and fresh, leaving just enough room for our Vanilla Crème Brulee for dessert.
Veuve Clicquot Champagne & Skuna Bay Salmon
Veuve Clicquot Yellow Label Brut is fresh and fragrant with a creamy texture and bright acidity. These flavors that are meant to be savored and when paired with our Skuna Bay Salmon, it is the perfect combination. Skuna Bay Salmon is combined with a lemon caper sauce, sautèed pepper and spinach, and fingerling potatoes. This combination is irresistible! Finish this combination off with our Coconut Rum Bombe, a coconut cake layered with vanilla pastry cream and drizzled with dark rum.
Laurent-Perrier Brut Champagne & Ethiopian Chicken
The fresh, moderate finish of Laurent- Perrier Brut, as well as the notes of ripe pears, apricots, dried flowers, and spices, make this champagne incredibility balanced but subtly bubbly. The Joyce Farms Pan Roasted Chicken, sautèed vegetables, and our Ethiopian-spiced berbere sauce will be the ideal companion. Dom Perignon Champagne & Panko Crusted Fish

It has low acidity, notes of poached apple honey and sun-dried black cherry, along with a rich, minerally finish. The pan-fried Panko Crusted Fish with a miso-ginger sauce, Brussel sprouts, and fingerling potatoes make the perfect pair with this exquisite champagne.
